Slow cooking chicken with the pesto allows the flavors to soak into the chicken leaving it nice a juicy! Give it a try!
What You’ll Need:
For The Pesto
– 1 cup parsley leaves
– 2 cups basil leaves
– 1/2 cup olive oil
– 4 cloves garlic
– 1/4 cup macadamia nuts
– 2tbsp lemon juice
– 2tsp oregano
– 1/4 tsp salt
– 1/4 tsp pepper
For the Chicken:
– 1tbsp ghee
– 2lbs skinless chicken
How To:
1. For the Pesto – Combine all the ingredients listed in a food processor and blend. Set aside.
2. In a pan, brown the chicken on all sides. About 5 minutes per side.
3. Put the chicken in the slow cooker, then pour the pesto over. Cook for 5 1/2 hours.
